Creamy Raw Pea Soup

After my lovely little ordeal a few weeks ago, I've really kicked it into high gear as far as my diet goes.  I'm trying to help my body heal and you know what?  I think it's working!  I've had LOADS of time on my hands (I'm guessing that's the first and last time I will ever be able to say that).  The good thing about preemies is that they sleep constantly so I've been able to try out several recipes that have been collecting dust over the past 6 months or so.  Basically I eat delicious food, watch trashy TV, and hold my baby all day long.  My life is so hard right now.

Creamy Raw Pea Soup
1 avocado
1/2 english cucumber
2 cups thawed peas
1/4 cup cauliflower
2 long celery sticks
2 Tbs. lemon juice (I just cut a wedge of lemon and toss it in)
1/4 - 1/2 tsp. real salt
1 - 2 cloves garlic
1 cup of cashew or almond milk
pepper to taste

extras: You can use any or none of the following spices/ingredients - dash of curry powder, turmeric, cayenne pepper, cumin, parsley, basil, or nutritional yeast (my favorite combo is curry, turmeric, and a little extra salt).

Let's talk about nutritional yeast for a minute.  There's some conflicting information out there, I know.  But what I understand is that it's an inactive yeast so it's not like the yeast used to leaven bread.  It doesn't affect the body's yeast levels.  Still though, because it's chemically produced I don't use it much.  Having said that, I've used it in this soup before and let me tell you, YUM!  It has a cheesy flavor that knocks this soup out of the friggin' park!  If you know anything interesting about nutritional yeast, do tell!

Oh, and let's all have a moment of silence for Jenny who is sitting by the pool getting her fill of vitamin D in Arizona.  Did I mention that we got like 12 inches of snow at our house yesterday?  Just sayin.

In Case You Were Wondering (which you probably weren't)

For those of you who were interested in my baby's bizarre birth story.  Here it is.
