I thought I'd just make a quick post about what our family eats most often for dinner. This lentil soup is from a blog entitiled Delectably Free, and it is a true winner for several reasons: 1) It's SO fast to prepare, 2) It's CHEAP!, and 3) It's so dang good, I sometimes find myself licking my plate...Actually, that last one is a bit of an exaggeration because my dad really does that, and it has scarred me for life.
Anyway, I make this almost every Sunday, and I double the recipe so we can eat it throughout the week for lunches or leftovers. We've been doing this for about a year, and I'm surprised we're not sick of it yet. Also, it's a great source for a plant-based protein. Serve with a salad, sweet potato fries, green shake, whatever!
