Mango Red Pepper Salsa


 
The other day my sister-in-law invited us over for a barbeque.  I usually like to bring Bite-Sized Salsa since it is always a big hit, but I wanted to try something different.  I've never made a salsa with fruit before, but I had everything on hand for this one, and it turned out yummy! After photographing, I ended up adding 1-2 large avocados, of course. Because nothing is complete without avocado, lol :)
 
 
Mango Red Pepper Salsa
 
2 ripe mangos, peeled and diced
1 red pepper, diced
1/2 red onion, diced
3 large tomatoes, diced
1-2 large avocados, diced
1/2 bunch cilantro leaves, chopped
Juice of 2-3 limes (I like more lime juice)
Dash of cayenne pepper
Salt and Pepper, to taste
 
Combine all ingredients in a bowl and let marinate in fridge for about an hour before serving.  Serve with Spicy Brown Rice Chips, if desired.
